An extreme selection of pure shiraz, grown-up and refined; a fluid the colour of a pontiff’s mozzetta. The bouquet is complex, teeming with notes of ripe dark cherries, mulberries and violets. Dark chocolate and mellow black fruit contrast with bright acidity to lend a chiaroscuro effect to the palate. A hint of vanilla spice from integrated oak, warming alcohol, savoury, persistent, with an enveloping grainy tannin and balsamic finish. A fine match for juicy pink-cooked lamb, roast venison, chateaubriand. Don’t eat meat?: mushrooms, truffles.
THE 2013 SELEZIONE DEL SAGGIO WINES
We have learnt that the clayey loam soils that characterise our vineyard sites are a key driver of the distinctiveness in our wines. That clay, especially where it is so prevalent in the soil structure that the vines are actually a bit stressed, slows the ripening and causes the berries and bunches to be smaller, concentrating the colour and flavours in the wine. So that's the viticultural aspect of our extreme selection approach to making the Selezione del Saggio wines - and it’s practically all taken care of by nature. We mean these wines to be for longish cellaring, so the winemaking is a bit different too: a longer time on skins after the ferment reaches dryness and long, careful ageing in 3rd use oak puncheons, followed by at least 6 months bottle rest before release.
